Gazpacho soup


Recently I took a trip to Barcelona with my sister and ate a lovely gazpacho soup; it was so delicious that I decided I must learn how to make it. The recipe is relatively simple, it is helpful if you have a food processor but if you do not it is still possible to make.
Ingredients
5 ripe tomatoes peeled
Half a white onion (coarsely chopped)
3 cloves of garlic
Small handful of cilantro
One bell pepper (recommended yellow, red or orange)
3 tablespoons of olive oil
2 tablespoons of white balsamic vinegar
2 tablespoons lemon juice
2 tablespoons tomato paste
2 cups tomato juice
Salt and pepper
Method
If you have a food process follow this method, if not finely chop the ingredients and mix well.
In a food processor mix together the tomatoes, Onion, garlic, cilantro, oil, vinegar, lemon juice, tomato paste and juice until soupy.  Put into a soup bowl and add finely chopped bell pepper and salt and pepper to taste. Garnish the top with onion slices and sprigs of cilantro. Chill in the refrigerator for at least four hours in order to give the flavors time to mix together. Serve chilled.
